About Last Weekend..... Baking a Cake!!!!

So about last weekend? Was quite a busy one for me.
How was yours??
My son turned two (2) last weekend .....Yipeee!!!
How time flies.
Can't believe am a mother of a two yr old.
It been an amazing journey so far with amazing memories.
I will be sharing some of the things I learnt this past two years. Stay tuned!!!

HOW TO BAKE A TRADITIONAL NIGERIAN CAKE.
For the yummy twist and that delicious cake.
Here is the recipe for my Traditional Nigerian cake above.
INGREDIENTS;
10 inch cake pan, plain flour, 8 medium eggs, 2 teaspoon baking powder, 2teaspoon vanilla extract, butter (not margarine), sugar, nutmeg, dry fruits.
PREPARATION;
1. Cream the butter and sugar with a wooden spatula until it looks much whiter and softer than the usual butter.
2. Beat the eggs. Break in a bowl and whisk together.
3. Add the eggs gradually and mix till you have a smooth fluffy blend of the creamed butter, sugar and egg
4. In a separate bowl add d dry ingredients; baking powder, flour, nutmeg and mix together.
5. Add the flour gradually into the mixture and stir.
6. Keep adding the flour and stir. Repeat until flour has incorporated well.
7. Add the vanilla or flavour of choice, dry fruits and browning if you want to have a brown colour.
8. Pour the cake into apan and straight to the oven.
NB; The pan should be greased with butter and a little flour first before adding the mixture.
After about an hour check the cake. This can be done by using a knife.
Dip into the centre of the cake.
If it comes out smeared the cake, your cake isn't ready.
If it comes out clean, your cake is ready...
Allow to cool and decorate....
